Drain the Fish: Using a slotted spoon or spider, carefully remove the fried fish from the oil and place it on a wire rack set over a baking sheet lined with paper towels to drain excess oil. Repeat with remaining fish fillets.

Prepare the Nashville Hot Sauce (Optional): While the fish is frying or draining, in a small bowl, combine brown sugar, 1 teaspoon chipotle chili powder, 1-2 teaspoons cayenne pepper (to taste), 1 teaspoon smoked paprika, 1 teaspoon Old Bay seasoning, and 1 teaspoon garlic powder. Pour 3 tablespoons of hot frying oil (carefully taken from the pot) or melted butter into the dry spice mixture. Mix well until all ingredients are thoroughly combined into a sauce.

Apply Nashville Hot Sauce (Optional): If desired, brush the prepared Nashville hot sauce generously over the hot fried fish fillets immediately after frying.

Toast Buns: Lightly toast the brioche buns in a dry pan, toaster, or oven until golden brown.

Assemble the Sandwiches: Spread a generous amount of the prepared tartar sauce on the bottom half of each toasted brioche bun.
