Peel and devein 300g of shrimp. Chop the shrimp into small, fine pieces. Transfer the chopped shrimp to a mixing bowl.

Add 1 teaspoon finely minced ginger, 1 teaspoon finely minced garlic, 1 tablespoon soy sauce, 1 teaspoon sesame oil, 1/2 teaspoon white pepper, 1 tablespoon cornstarch, 1 egg white, and 2 tablespoons chopped green onion to the bowl with the shrimp.

Mix all the ingredients thoroughly until well combined and the mixture is slightly sticky.

Take one wonton wrapper and place a small amount of the prepared shrimp filling in the center. Lightly moisten two adjacent edges of the wrapper with water.

Fold the wrapper diagonally in half to form a triangle, pressing the edges firmly to seal. Bring the two longer points (corners) of the triangle together, slightly overlapping them. Dampen one of the overlapping points with water. Press the overlapping points together to seal, forming the classic wonton shape. Repeat this process with the remaining filling and wrappers.

Heat 1 tablespoon of oil in a pot over medium heat. Add 1 tablespoon of minced garlic and 1/2 tablespoon of minced ginger to the pot. Sauté until fragrant, stirring briefly.

Pour in 6 cups of chicken broth. Add 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1/2 teaspoon of white pepper. Bring the soup to a boil.

Once the soup is boiling, carefully add the assembled wontons to the pot. Cook the wontons for 2-3 minutes, or until they float to the surface and are cooked through.

Ladle the hot shrimp wonton soup into serving bowls. Garnish with fresh chopped green onion and cilantro before serving.
