Open the can of tuna and thoroughly drain any excess oil or water. Transfer the drained tuna to a medium mixing bowl.

Add the ssamjang, gochujang, minced garlic, chopped green onion, sesame oil, and granulated sugar (or corn syrup) to the bowl with the tuna.

Using a spoon or fork, mix all the ingredients together until well combined. Mash the tuna slightly as you mix to integrate it with the pastes and aromatics.

Taste the ssamjang and adjust seasonings as needed. Add more ssamjang or gochujang for a more intense flavor, more sugar for sweetness, or a pinch of salt if desired.

Transfer the tuna ssamjang to a serving dish. Garnish with toasted sesame seeds.

Serve immediately with a bowl of warm rice, fresh lettuce leaves (for ssam wraps), or as a dip for vegetables.
