Preheat your oven to 180°C (350°F).

Roast the almonds in the preheated oven for 10 minutes, or until lightly golden and fragrant. Keep a close eye on them to prevent burning.

Remove the roasted almonds from the oven and allow them to cool completely on the baking sheet. This can take about 15 minutes.

Once cooled, transfer the roasted almonds into a food processor.

Start blending the almonds in the food processor. Initially, the almonds will break down into a coarse meal, then become crumbly.

Continue blending, scraping down the sides of the food processor as needed. The mixture will progress from a crumbly texture to a pasty consistency, and then gradually become smoother as the oils are released.

While the almonds are blending and starting to become pasty, add the pinch of salt to the food processor.

Next, add the honey to the food processor.

Then, add the olive oil to the mixture.

Continue blending until the almond butter reaches a smooth and creamy consistency. This may take several minutes, and you might need to pause and scrape down the sides a few times.

Once smooth, transfer the freshly made almond butter from the food processor into a clean, airtight jar.

The almond butter is now ready to be enjoyed. Store at room temperature for up to 2 weeks, or in the refrigerator for longer storage.
