Preheat your oven to 325°F (163°C) and line an 8x8-inch baking pan with parchment paper.

For the cookie dough, whisk together the melted unsalted butter, brown sugar, and granulated sugar in a medium bowl until smooth.

Mix in the egg and vanilla extract until well combined.

Fold in the all-purpose flour, baking soda, and salt until just combined. Be careful not to overmix.

Stir in the chocolate chunks for the cookie dough and set the mixture aside.

For the brownie batter, whisk together the melted butter, neutral oil, granulated sugar, and light brown sugar in a separate large bowl for about 1 minute until the mixture is glossy.

Add the large eggs, egg yolk, and vanilla extract to the brownie mixture and whisk for another minute until the batter is pale and slightly thickened.

Fold in the all-purpose flour, unsweetened cocoa powder, and salt until just combined. Do not overmix.

Stir in chocolate chunks into the brownie batter as desired.

Spread half of the brownie batter evenly into the prepared baking pan.

Dollop pieces of the prepared cookie dough over the top of the brownie batter layer.

Cover the cookie dough dollops with the remaining brownie batter, spreading it gently to cover.

Finish by placing more dollops of the remaining cookie dough on top of the final brownie layer.

Bake for 35–45 minutes, or until the edges are set and the center is still slightly soft. A toothpick inserted into the center should come out with moist crumbs, not wet batter.

Let the brookies cool in the pan for at least 30 minutes before scooping and serving.
