In a large bowl, whisk together the Greek yogurt, lemon zest, lemon juice, grated or finely minced garlic, ground cumin, smoked paprika, dried oregano, Aleppo pepper, kosher salt, black pepper, honey, and extra virgin olive oil until the mixture is smooth and well combined.

Add the cut chicken thigh chunks to the bowl with the marinade. Toss the chicken until each piece is fully coated with the marinade. Cover the bowl (e.g., with plastic wrap) and refrigerate for at least 1 hour. For best results, marinate longer, up to overnight.

Once marinated, thread the chicken pieces onto skewers. If using wooden skewers, soak them in water for at least 30 minutes prior to threading to prevent burning.
