Place the sliced pork in a bowl. Add 1 teaspoon salt, 1 teaspoon cooking wine, 1 teaspoon soy sauce, and 1 teaspoon cornstarch to the pork. Mix the ingredients well with the pork. Add 1 teaspoon oil and mix well again. Marinate the pork for 15 minutes.

In a separate bowl, combine 1 teaspoon salt, 1 teaspoon sugar, 1 teaspoon soy sauce, 1 teaspoon oyster sauce, 1 teaspoon dark soy sauce, 1 teaspoon balsamic vinegar, 1 tablespoon cornstarch, and 100 ml water. Mix all sauce ingredients well until combined.

Heat oil in a wok over medium-high heat. Add the marinated pork to the hot wok. Stir-fry the pork until its color changes, about 3-5 minutes. Remove the cooked pork from the wok and set aside.

In the same wok, add the minced garlic and dried chilies. Stir-fry until fragrant, about 30 seconds. Add the sliced green and red peppers to the wok and stir-fry for 2-3 minutes. Add the sliced tomatoes to the wok and continue to stir-fry for another 2-3 minutes.

Return the cooked pork to the wok with the vegetables. Pour the prepared sauce over the ingredients in the wok. Stir-fry until the sauce thickens to your desired consistency, about 2-3 minutes.

Serve the stir-fried meat with tomatoes hot, preferably with rice.
