Dice the beef bacon into small pieces. Place the diced bacon in a heavy-bottomed pan over medium-high heat. Cook for 10 to 15 minutes, or until mostly crispy and cooked through. Remove the cooked bacon from the pan and set it aside to drain on a paper towel-lined plate.

Pour out all but 1 tablespoon of the bacon grease from the pan. Add the diced white onion to the pan and sauté for 3 to 5 minutes, until it begins to soften and get some color.

Add the black coffee, maple syrup, and packed brown sugar to the pan with the onions. Stir to combine all ingredients and bring the mixture to a simmer over medium-low heat.

Return the cooked beef bacon to the pan. Season with a little salt and pepper to taste. Let the bacon jam simmer for about 40 to 45 minutes, stirring occasionally, until it thickens and becomes jammy. If the mixture becomes too dry or thick before it's jammy, you can add a little beef stock as needed.

If assembling burgers: Prepare smashburger patties according to your preferred method. Once perfectly seared, top each patty with a slice of American cheese and allow it to melt for a few seconds.
To assemble the burger: Spread burger sauce on the toasted buns. Place a few pickles on the bottom bun. Add two smashburger patties with melted cheese. Spoon a generous amount of the prepared beef bacon jam on top of the patties. Spread more burger sauce on the top bun.

Cut the burger in half and serve immediately. Enjoy!
