Cut the 1 kg of chicken thigh fillet into bite-sized pieces. Place the chicken pieces into a large mixing bowl.

Add 1 teaspoon of salt, 1 teaspoon of white pepper, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and 1 large egg to the chicken. Mix all ingredients well by hand until the chicken is thoroughly coated.

Add 1 cup of plain flour and 1 cup of potato starch to the chicken mixture. Mix again until every piece of chicken is evenly coated with the dry batter.

Heat oil in a wok or a deep pan to a medium temperature for the first fry. Test the oil by dipping a chopstick; if bubbles form around it, the oil is ready. Carefully place the battered chicken pieces into the hot oil, ensuring not to overcrowd the pan.

Fry the chicken until it turns a light golden brown color (it will not be fully cooked). Remove the chicken from the oil and transfer it to a separate bowl.

Increase the oil temperature for the second fry. Return the lightly fried chicken pieces to the hotter oil. Fry for a second time until the chicken becomes golden brown and develops a crispy texture. Remove the crispy chicken from the oil and place it on a wire rack or paper towels to drain any excess oil.

In a separate clean pan, add a small amount of oil. Add 3 cloves of minced garlic and sauté until fragrant.

Pour in 1/2 cup of honey, 2 tablespoons of soy sauce, 2 tablespoons of white vinegar, and 2 tablespoons of sugar. Stir all the sauce ingredients together thoroughly. Bring the sauce to a simmer and allow it to thicken slightly.

Add the crispy fried chicken directly into the simmering honey sauce. Toss the chicken vigorously until each piece is completely coated with the glossy honey sauce.

Transfer the Honey Chicken to a serving dish. Garnish with sesame seeds. Serve immediately, optionally with rice.
