Cut the chicken into bite-sized pieces if not already done. In a medium bowl, combine the chicken with 1/2 teaspoon salt, 1/2 teaspoon black pepper, 3 tablespoons cornflour, and 1 egg. Mix well until the chicken is evenly coated. Let it marinate for at least 15 minutes.

Heat a sufficient amount of cooking oil in a large pan or wok over medium-high heat. Carefully add the marinated chicken pieces in batches, ensuring not to overcrowd the pan. Fry until the chicken is golden brown and crispy on all sides, about 5-7 minutes per batch. Remove the fried chicken and place it on a plate lined with paper towels to drain excess oil.

In a separate small bowl, prepare the sauce by whisking together 1 tablespoon cornflour, 1/3 cup water, 2 tablespoons soy sauce, 1 tablespoon Mama Sita’s oyster sauce, 1/2 teaspoon black pepper, and 1/2 teaspoon chicken powder until smooth.

Drain most of the oil from the pan used for frying the chicken, leaving about 1 tablespoon. Add the 1/2 teaspoon chopped garlic, 1/2 teaspoon chopped ginger, diced onion, and red chillies (if using) to the pan. Sauté for 2-3 minutes until fragrant and the onion softens.

Return the fried chicken to the pan with the sautéed aromatics. Pour the prepared sauce over the chicken and vegetables. Toss everything together quickly until the chicken and vegetables are well coated with the thickened sauce.

Remove from heat. Garnish with chopped spring onions before serving.

Serve immediately with steamed rice and enjoy your homemade Chinese Chicken!
