In a bowl, combine the 500g of 5% beef mince, 2 teaspoons of Chinese five spice, 1 teaspoon of chilli flakes, 3 tablespoons of hoisin sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of white wine vinegar, and 1 heaped tablespoon of brown sugar. Mix all these ingredients thoroughly until they are well combined.

Boil the 250g ribboned noodles according to the package instructions. Before draining, reserve 2-3 tablespoons of the noodle cooking water.

Place the prepared beef mixture into a hot pan. Break up the mince with a utensil and cook until it is nicely browned and sticky.

In a separate bowl, add 4 tablespoons of tahini, 2 teaspoons of chilli crisp oil, and 1 1/2 tablespoons of light soy sauce. Add 2-3 tablespoons of the reserved noodle cooking water to the sauce mixture. Mix thoroughly until the sauce achieves a creamy consistency.

Shred 3 spring onions and 1 cucumber. Chop 1/2 a handful of fresh coriander. Combine these chopped greens in a small bowl. Add 1 teaspoon of white wine vinegar to the greens and mix gently.

Add the cooked and drained noodles directly into the bowl with the creamy tahini sauce. Mix well, ensuring all the noodles are thoroughly coated with the sauce.

Portion the sauced noodles into serving bowls. Top each serving generously with the sticky hoisin beef. Garnish with the fresh greens mixture (shredded spring onions, cucumber, and coriander). Finish by sprinkling some sesame seeds over the top. Serve and enjoy.
