Finely chop the small onion, small carrot, and 1 stick of celery to prepare the soffritto.

Add 2 tablespoons of olive oil to a large pot over medium heat. Add the chopped onion, carrot, and celery to the pot and sauté them until they have softened, about 5-7 minutes.

Add the 2 pieces of pork ribs and 2 pieces of beef to the pot with the vegetables. Brown the meat on all sides, turning occasionally, for about 8-10 minutes.

Pour in 1 glass of red wine to deglaze the pot, scraping up any browned bits from the bottom of the pot with a wooden spoon. Allow the wine to simmer for 2-3 minutes until slightly reduced.

Add 1 liter of passata to the pot, stirring to combine all ingredients.

Add fresh basil and salt to taste. Stir well.

Cover the pot and let the sauce simmer on low heat for 3 hours, stirring occasionally to prevent sticking and ensure even cooking. The long simmering time allows the flavors to meld and deepen.

The sugo is now ready to be served, traditionally with your favorite pasta.
