Heat the olive oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.

Drain any excess fat from the skillet. Add the sliced yellow onion to the skillet and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.

Stir in the minced garlic and cook for another 1 minute until fragrant. Be careful not to burn the garlic.

Add the diced potatoes, undrained canned diced tomatoes, beef broth, Worcestershire sauce, dried thyme, salt, and black pepper to the skillet. Stir well to combine all ingredients.

Bring the mixture to a simmer, then reduce the heat to low, cover the skillet, and let it cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Uncover the skillet, increase the heat to medium-low, and continue to cook for another 5-10 minutes, stirring occasionally, until some of the liquid has reduced and the sauce has thickened slightly.

Taste and adjust seasonings if necessary. Garnish with fresh chopped parsley before serving hot.
