Preheat your oven to 425°F (220°C). Prepare the chicken by placing the 2 large chicken breasts between sheets of parchment paper. Use a rolling pin or meat mallet to tenderize them to an even thickness. This helps ensure even cooking and improves texture.

Place the tenderized chicken breasts on a baking sheet lined with parchment paper. Drizzle with 1 teaspoon (5 g) of olive oil. Season generously with salt, pepper, and garlic powder on both sides.

Bake the seasoned chicken in the preheated oven for 15 minutes, or until cooked through and an internal temperature of 165°F (74°C) is reached.

Once the chicken is cooked, remove it from the oven. Evenly distribute 100 g of marinara sauce over the two pieces of chicken (50 g per piece). Then, add 90 g of low-fat cottage cheese on top of the marinara sauce (45 g per piece). Finally, grate 20 g of Parmigiano Reggiano over the cottage cheese (10 g per piece).

Return the baking sheet with the topped chicken to the oven. Change the oven setting to broil (high). Broil for 5-10 minutes, or until the cheese is hot, melty, and browned to your liking. Keep a close eye on it to prevent burning.
