In a medium saucepan, combine the water, dried elderberries, and thinly sliced fresh ginger.

Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer gently for 10 minutes to allow the elderberries and ginger to infuse the water.

Remove the saucepan from the heat. Add the chamomile tea bags to the hot liquid. Cover the saucepan and let the tea steep for 5 to 7 minutes. Steeping longer may result in a more bitter taste.

Carefully strain the brew through a fine-mesh sieve into a heatproof pitcher or directly into mugs, discarding the elderberries, ginger, and tea bags.

Stir in the fresh lemon juice and honey until the honey is fully dissolved. Taste and adjust the amount of honey if a sweeter brew is desired.
