Preheat your oven to 325 degrees Fahrenheit. Lightly spray a standard loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.

In a large bowl, cream together the softened unsalted butter, brown sugar, and white sugar until light and fluffy.

Add the mashed banana to the butter and sugar mixture and mix until just combined.

Add the eggs and vanilla paste to the wet ingredients and mix again. Don't worry if the mixture appears to split; this is normal.

In a separate medium bowl, whisk together the AP flour, baking soda, and salt.

Remove the banana bread from the oven. Immediately pour the Grade A maple syrup evenly over the top. The maple syrup will absorb quickly, so use a pastry brush to distribute it in small sections.

Sprinkle with flaky sea salt. Allow the banana bread to cool completely in the pan before slicing and serving. This can take up to 2 hours.
