In a large bowl or the bowl of a stand mixer, combine the warm water and yeast. Let it sit for 10 minutes until the yeast becomes foamy, indicating it's active.

Add the flour and salt to the yeast mixture. Mix for about 1 minute until just combined.

Pour in the olive oil and knead the dough for 7 to 8 minutes, either by hand or with a stand mixer fitted with a dough hook, until the dough is smooth and elastic. If the dough is too sticky, add additional flour, 1/4 cup at a time, until it is soft to the touch but not stiff.

Cover the dough with a clean kitchen towel or plastic wrap and place it in a warm area. Let it rise for at least 1 hour, or until it has doubled in size.

Gently punch down the risen dough to release the air. Divide the dough into 2 equal balls.

Cover the dough balls and let them rise for an additional 20 minutes.

While the dough is resting, preheat your oven to 550°F, or as hot as your oven allows. If using a ceramic tile or pizza stone, place it in the oven during preheating to ensure it gets very hot.

On a lightly floured surface, flatten each dough ball into a pizza round of your desired thickness and size.

Spread an even layer of pizza sauce over each dough round, leaving a small border for the crust. Top generously with mozzarella cheese.

Let the prepared pizzas rest for 30 minutes. This allows the dough to rise slightly again before baking, resulting in a lighter crust.

Carefully transfer the pizzas onto the hot tile/stone or a baking sheet. Bake for about 20 minutes, or until the crust is golden brown and the cheese is bubbly and lightly browned.

Remove from the oven, slice, and serve hot and fresh.
