Prepare the sushi rice according to package directions. While the rice is still warm, transfer it to a large bowl. In a medium bowl, combine the drained Trader Joe's Solid White Albacore Tuna, mayonnaise, Trader Joe's Sriracha Sauce, sesame oil, soy sauce, and sliced green onions. Mix well until everything is evenly combined. Taste and adjust sriracha or soy sauce if needed.

Once the rice is firm, remove it from the refrigerator. Using a sharp knife or a cookie cutter, cut the rice into bite-sized rectangles or squares (about 1 1/2 to 2 inches).

Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once the oil is hot, carefully place the rice pieces into the skillet in a single layer, ensuring not to overcrowd the pan. Fry for 3-5 minutes per side, or until golden brown and crispy. You may need to do this in batches.

Remove the crispy rice from the skillet and place them on a plate lined with paper towels to drain any excess oil.

To assemble, top each crispy rice bite with a spoonful of the spicy tuna mixture. Garnish with sliced avocado, nori strips, and crushed Trader Joe's Everything but the Bagel Seasoned Crackers (if using). Serve immediately.
