In a bowl, combine 300g of sliced beef with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, 1/2 teaspoon white pepper, 1/2 teaspoon baking soda, 1 tablespoon cornstarch, and 1 tablespoon water. Mix all ingredients thoroughly until the beef is well coated. Add 1 tablespoon of oil and mix again. Set the marinated beef aside.

Slice 1 medium onion into strips. Chop 2 stalks of green onion.

In a separate bowl, combine 1 tablespoon soy sauce, 2 tablespoons oyster sauce, 1 teaspoon sugar, 1/2 teaspoon white pepper, 3 tablespoons water, and 1 teaspoon cornstarch. Whisk until all ingredients are well mixed and the cornstarch is dissolved.

Heat 2 tablespoons of oil in a pan or wok over medium-high heat. Add the marinated beef to the hot pan and stir-fry until the beef is browned and cooked through. Once cooked, remove the beef from the pan and set it aside.

Using the same pan, add the sliced onion. Stir-fry for 1 minute until the onion begins to soften slightly.

Return the cooked beef to the pan with the onions. Pour the prepared stir-fry sauce over the beef and onions. Stir-fry continuously until the sauce thickens and coats all the ingredients evenly. Finally, add the chopped green onions and stir briefly to combine.

Serve the Chinese Beef and Onion Stir-Fry hot.
