Rinse the 500 grams of sushi rice under cold water until the water runs clear. Add the rinsed rice and 500 ml of water to a rice cooker. Cook according to the rice cooker's instructions.

While the rice is cooking, prepare the seasoning mixture by combining 1 teaspoon of salt, 1 tablespoon of sugar, and 2 tablespoons of rice vinegar in a small bowl. Stir until the salt and sugar are dissolved.

Once the rice is cooked, transfer it to a large bowl. Pour the seasoning mixture over the hot rice and gently mix, fanning the rice as you mix to cool it slightly and distribute the seasoning evenly.

Place a round metal ring (approximately 4-5 inches in diameter) or a similar mold on a piece of parchment paper. Take a portion of the seasoned sushi rice and press it firmly and evenly into the ring to form a flat, round disk. Carefully remove the metal ring. Place another piece of parchment paper on top of the rice disk and gently press down again to ensure it is compact and even. Repeat this process to create 2-4 rice disks, depending on your desired pizza size and rice amount.

Heat a pan over medium-high heat with about 1/2 cup of oil for shallow frying, ensuring enough oil to cover the bottom of the pan and partially submerge the rice disks. Carefully place a rice disk into the hot oil. Fry until golden brown and crispy on both sides, about 3-5 minutes per side. This will create a crunchy texture. Remove the fried rice disk from the pan and place it on a wire rack to drain any excess oil. Repeat for all rice disks.

Prepare the spicy mayo: In a small bowl, combine 1/4 cup of Japanese mayonnaise and 1 tablespoon of sriracha. Mix well until smooth. Adjust sriracha to taste.
Prepare the spicy salmon: Dice the salmon into small, bite-sized pieces. In a separate bowl, combine the diced salmon with the remaining 1/4 cup of Japanese mayonnaise, 1 tablespoon of sriracha, 1 teaspoon of sesame oil, and 2 tablespoons of masago. Mix thoroughly to coat the salmon.

Slice the avocado thinly and chop the spring onion for garnish.

Assemble the sushi pizza: Place a fried crispy rice base on a serving board or plate. Spread an even layer of the prepared spicy mayo over the entire surface of the rice base. Arrange the sliced avocado on top of the spicy mayo layer. Generously spoon the spicy salmon mixture over the avocado. Drizzle additional spicy mayo over the salmon and avocado layers for extra flavor and presentation. Garnish with chopped spring onion and sprinkle with sesame seeds.

Cut the assembled sushi pizza into slices, similar to a traditional pizza, and serve immediately.
