Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

Take each slice of white sandwich bread and carefully cut off all the crusts. You can save the crusts to make croutons later if desired.

Once the crusts are removed, cut each crustless bread slice into small, approximately 1-inch square pieces.

In a medium mixing bowl, combine the finely diced onion, grated Parmesan cheese, finely chopped fresh parsley, finely chopped fresh chives, and mayonnaise.

Stir all the ingredients in the bowl thoroughly with a spoon until they are well combined and form a cohesive, spreadable paste.

Take each small square of bread and place a spoonful of the prepared cheese and onion mixture on top, spreading it evenly to cover the bread.

Arrange the assembled cheese bites onto the prepared baking sheet, leaving a small space between each bite.

Bake the cheese bites for 20 to 25 minutes, or until the topping is golden brown and bubbly.
