Carefully shuck the 12 fresh oysters, discarding the top shell and keeping the oyster meat in the bottom shell. Arrange the shucked oysters in their shells on a baking sheet. To keep them stable, place them on a bed of rock salt or crumpled aluminum foil.

In a small saucepan or skillet, melt the 4 tablespoons of unsalted butter over medium heat. Add the finely diced 1 small shallot and sauté until softened and translucent, approximately 2-3 minutes.

Stir in the 2 cloves of minced garlic and sauté for another 30 seconds until fragrant.

Pour in the 1/4 cup of dry white wine, stirring to deglaze the pan and scrape up any browned bits from the bottom. Allow it to simmer for 1 minute to reduce slightly.

Add the 1/2 cup of heavy cream to the pan and bring the mixture to a gentle simmer. Season the sauce by stirring in the 1/2 teaspoon of smoked paprika, 1/4 teaspoon of salt, 1/8 teaspoon of black pepper, and 1/4 teaspoon of hot sauce.

Stir in the 1/4 cup of grated Parmesan cheese until it melts and the sauce is slightly thickened. Remove the pan from heat.

Preheat your oven to 400°F. Spoon a generous amount of the creamy sauce over each oyster, ensuring the oyster meat is well covered. Sprinkle additional grated Parmesan cheese over the top of each sauced oyster.

Bake in the preheated oven for 8-10 minutes, or until the topping is golden brown and bubbly.

Once baked, carefully remove the oysters from the oven. Garnish with the 2 tablespoons of freshly chopped parsley before serving immediately.
