In a large mixing bowl, combine the fat-free Greek yogurt, tomato paste, minced garlic, ground cumin, paprika, turmeric, cayenne pepper, salt, and 1/2 teaspoon black pepper. Squeeze the juice from the whole lemon into the bowl.

Mix all the marinade ingredients thoroughly with a spoon until well combined.

Add the trimmed chicken thighs to the marinade in the bowl. Mix well, ensuring each piece of chicken is fully coated with the marinade.

Preheat your air fryer to 390°F. Lightly spray the air fryer basket with cooking spray.

Place the marinated chicken thighs in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary. Spray a little extra black pepper on top of the chicken.

Air fry the chicken thighs for 15-18 minutes, flipping halfway through, until cooked through and lightly charred. The internal temperature should reach 165°F.

Once cooked, remove the chicken from the air fryer and place it on a cutting board. Let it rest for 2 minutes.

Cut the rested chicken into smaller, bite-sized pieces.

Garnish the chicken shawarma with sliced red onion and chopped fresh cilantro. Serve immediately with Tzatziki sauce, in low carb wraps, over rice, or with a fresh salad.
