In a medium bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 teaspoon cornstarch, and 1 teaspoon vegetable oil. Mix well and set aside to marinate for at least 15 minutes while you prepare other ingredients.

In a small bowl, whisk together the dark soy sauce, 2 tablespoons soy sauce, 1 tablespoon oyster sauce, granulated sugar, white vinegar, and white pepper. Set the sauce aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until shimmering. Add the marinated beef in a single layer and stir-fry for 2-3 minutes until browned and cooked through. Remove the beef from the wok and set aside.

Add another 1 tablespoon of vegetable oil to the wok. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

Add the Chinese broccoli stems to the wok and stir-fry for 2-3 minutes until slightly tender-crisp. Then add the leaves and stir-fry for another 1-2 minutes until wilted.

Push the vegetables to one side of the wok. Add the remaining 1 tablespoon of vegetable oil to the empty side. Pour in the beaten eggs and scramble them quickly until just set, about 1 minute. Break them into smaller pieces.

Add the fresh wide rice noodles to the wok. Pour the prepared sauce over the noodles and vegetables. Toss everything together vigorously, using two spatulas or tongs, to ensure the noodles are evenly coated with the sauce and slightly caramelized. This may take 2-3 minutes.

Return the cooked beef to the wok and toss to combine with the noodles and vegetables. Continue to stir-fry for another 1-2 minutes to heat everything through.
