Place the ground meat (75% meat, 25% fat) on a cutting board. Season the meat with salt, pepper, garlic powder, and a dash of soy sauce. Mix the meat thoroughly by hand until just combined. Form the seasoned meat into eight equal-sized balls (two patties per burger).

Clean the cutting board. Slice bacon into small pieces. Cook the sliced bacon in a hot cast iron pan over medium-high heat until crispy. Remove the bacon with a slotted spoon, leaving the rendered fat in the pan. Set crispy bacon aside.

Add sliced onions to the pan with the bacon fat. Add brown sugar, black pepper, and soy sauce. Continue cooking over medium heat, stirring occasionally, until the onions are caramelized and tender, about 8-10 minutes.

While the onions caramelize, prepare the special sauce. In a small bowl, combine mayonnaise, ketchup, BBQ sauce, and mustard. Season with salt, black pepper, garlic powder, onion powder, and red pepper paste. Mix all ingredients well until a smooth, uniform sauce is achieved. Set aside.

Heat the cast iron pan over high heat until very hot. Place one of the meat balls on the hot pan. Cover the meatball with parchment paper and use a heavy object (like another pan or a burger press) to smash it flat into a thin patty. Cook for 2-3 minutes until a good crust forms on the bottom. Flip the patty. Place a slice of American cheese on top of the cooked patty. Cook for approximately two minutes until the cheese is melted. Repeat this process for all desired patties, cooking in batches if necessary.

Toast the brioche burger buns in the same hot pan for 1-2 minutes until lightly golden.

Assemble the burger: Spread a generous amount of the prepared sauce on the bottom bun. Place sliced tomato on top of the sauce. Stack two cooked cheeseburger patties. Add a layer of the caramelized bacon and onion mixture, and sliced jalapenos. Place the top bun on the assembled burger.
