Turn your Instant Pot to the Sauté setting.

Add enough olive oil to coat the bottom of the pot.

Add the diced ham steak and sauté until lightly browned.

Stir in the drained gandules, heaping tablespoon of sofrito, and minced garlic (or garlic paste).

Season with adobo, garlic powder, onion powder, oregano, and the packet of sazón.

Add the tomato sauce and mix well to combine all ingredients.

Stir in the washed medium-grain rice and let it sauté for 1 to 2 minutes, stirring occasionally.

In a separate cup, mix the warm water with the chicken bouillon cube (or bouillon powder) until it is fully dissolved.

Pour the bouillon mixture into the Instant Pot and stir everything together.

Add a handful of fresh cilantro on top of the rice mixture.

Cancel the Sauté mode on your Instant Pot.

Close the lid of the Instant Pot and ensure the valve is set to the Sealing position.

Press the Rice setting and adjust the cook time to 17 minutes.

Once cooking is complete, carefully perform a quick release of pressure if needed. Be cautious of the steam.

Open the lid, fluff the arroz con gandules with a fork, and serve immediately. Enjoy!
