In a bowl, combine the cubed chicken thigh with salt, black pepper, soy sauce, egg, and cornstarch. Mix well to ensure the chicken is evenly coated. This is your marinade.

Place the all-purpose flour on a plate. Take each piece of marinated chicken and coat it thoroughly in the flour, shaking off any excess.

Heat vegetable oil in a pan over medium-high heat. Once hot, carefully add the breaded chicken pieces to the pan. Fry for 5-7 minutes until the chicken is golden brown and crispy. Remove the fried chicken and place it on a wire rack to drain excess oil.

In a separate bowl, whisk together ketchup, rice vinegar, soy sauce, brown sugar, grated ginger, minced garlic, chicken broth, and the cornstarch slurry (made from 1 tablespoon cornstarch + 2 tablespoons water).

In a wok or large pan, heat 1 tablespoon vegetable oil. Add the diced red bell pepper, diced green bell pepper, and diced onion. Sauté for 2-3 minutes until slightly softened but still crisp.

Pour the prepared sweet and sour sauce into the pan with the sautéed vegetables. Stir continuously until the sauce thickens.

Return the fried chicken pieces to the pan with the sauce and vegetables. Toss everything together until the chicken and vegetables are thoroughly coated in the sauce.
