Slice the 300g chicken breast. In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, 1 teaspoon of sesame oil, 1 teaspoon of salt, and 1 teaspoon of pepper. Mix well to ensure the chicken is evenly coated, then set aside.

Take the 300g peeled and deveined shrimp. In a separate bowl, marinate the shrimp with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, 1 teaspoon of sesame oil, 1 teaspoon of salt, and 1 teaspoon of pepper. Mix thoroughly and set aside.

In a bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, 1 tablespoon of cornstarch, and 1/2 cup of water. Whisk all ingredients together until the sauce is smooth and no lumps of cornstarch remain.

Heat a large pan with 2 tablespoons of oil over medium-high heat. Add the marinated chicken to the hot pan and cook until it is almost done. Remove the cooked chicken from the pan and set it aside. Add the marinated shrimp to the same pan. Cook until the shrimp turn pink and are cooked through. Remove the cooked shrimp from the pan and set it aside.

Add the 3 cloves of minced garlic and 1 sliced onion to the pan. Sauté until the garlic is fragrant and the onion has softened slightly. Add 2 cups of sliced cabbage, 2 julienned carrots, 1 cup of broccoli florets, and 1 sliced red bell pepper to the pan. Continue to sauté the vegetables for a few minutes until they are tender-crisp.

Return the cooked chicken and shrimp to the pan with the sautéed vegetables. Add the prepared lo mein noodles to the pan. Pour the previously mixed lo mein sauce over all the ingredients in the pan. Toss everything together thoroughly, ensuring the sauce evenly coats the noodles, chicken, shrimp, and vegetables. Finally, add 1 cup of bean sprouts and toss for another minute to incorporate them into the dish.

Garnish the finished lo mein with chopped green onions before serving.
