Cook the short-grain/sushi rice according to the package instructions. Alternatively, use microwave rice for convenience. This step will take approximately 15-20 minutes.

While the rice is cooking, prepare your chosen fillings and any desired veggie sides or boosters. For the Crispy Chicken variation: Dice the 2 air fryer crispy chicken tenders and slice 1/2 avocado. For the Tuna variation: Drain the 125g tuna and mix it with 1 to 2 teaspoons of mayo or yoghurt in a bowl. Slice 1/2 avocado. For the Salmon variation: Slice 50 to 100g of smoked/cooked salmon. (Note: If pregnant, current Aus guidelines recommend avoiding refrigerated smoked salmon unless heated until steaming hot).

Take a container (approximately 600mL in size) and either grease it or line it thoroughly with cling film (plastic wrap). This will help with easy removal.

Assemble the sushi block based on your chosen variation. For Crispy Chicken, Avocado & Cream Cheese: Place a layer of 1/2 sliced avocado at the bottom of the prepared container. Top the avocado with the diced crispy chicken tenders. Add dollops of approximately 2 tablespoons cream cheese over the chicken. For Tuna & Avocado: Place a layer of 1/2 sliced avocado at the bottom of the prepared container. Top the avocado with the prepared tuna mixture. For Salmon & Cream Cheese: Spread approximately 2 tablespoons cream cheese evenly at the bottom of the prepared container. Place the sliced salmon on top of the cream cheese.

Regardless of the filling, add the 1/2 cup of cooked short-grain/sushi rice on top of the layered ingredients in the container. Press the rice down firmly with a spoon or your fingers to compact it. Place 1/2 nori sheet (or cut to size) on top of the pressed rice.

Carefully flip the entire contents of the container onto a plate. Remove the container and the cling film (if used).

Slice the sushi block into desired portions and serve immediately. Garnish with spring onion and roasted sesame seeds, and enjoy with any preferred serving ideas like quick pickled carrot, spicy cucumber salad, edamame, ginger, or wasabi.
