Immediately transfer the egg-washed shrimp to the seasoned flour mixture. Press the flour firmly onto the shrimp to ensure it's completely coated with the dry mixture. Gently shake off any excess flour and place the coated shrimp on a clean plate or baking sheet. Repeat this dredging process for all remaining shrimp.

Heat the vegetable oil in a deep pot or Dutch oven over medium-high heat until it reaches 350°F. Use a deep-fry thermometer to monitor the temperature.

Carefully place a few coated shrimp into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes, or until the shrimp turn golden brown and are cooked through. The exact time will depend on the size of the shrimp and the oil temperature.

Once golden brown, use a slotted spoon or spider to remove the fried shrimp from the oil. Transfer them to a wire rack lined with paper towels to drain any excess oil.

Repeat the frying process with the remaining shrimp in batches, ensuring the oil temperature returns to 350°F between batches. Serve the fried shrimp immediately, optionally with a squeeze of fresh lemon from the lemon wedges.
