Heat a wok to maximum heat until it is smoking slightly.

Add a generous amount of oil to the hot wok. Place the velveted beef into the oil. Move the beef around constantly to cook evenly and prevent sticking to the bottom of the wok.

Once the beef is cooked through and browned, strain it from the oil using a large slotted ladle or strainer. Set the cooked beef aside.

In the same wok (with any remaining oil), add the dehydrated garlic and the 2 slices of ginger. Sauté for about 30 seconds until fragrant.

Add a pat of butter to the wok, allowing it to melt. Immediately add the cooked chow mein style noodles to the wok.

Return the cooked beef to the wok with the noodles. Season with a generous drizzle of dark soy sauce and oyster sauce. Stir-fry and toss the ingredients vigorously in the wok to combine the flavors.

Sprinkle sugar over the noodles and beef. Add a small amount of MSG (Yum Yum) from a shaker. Pour in a little bit of water to help loosen the mixture and create some steam. Sprinkle white pepper and chicken powder into the wok.

Add the pre-cooked/blanched broccoli florets to the wok.

Finish off by drizzling Chinese cooking wine and sesame oil over the ingredients. Continue to stir-fry and toss the ingredients vigorously in the wok, allowing for some charring and creating flames if possible, until everything is thoroughly mixed and heated through.

Once thoroughly mixed and heated, serve the Beef and Broccoli Chow Mein immediately onto a plate.
