Soak the dried yuba sticks in a large bowl of warm water for at least 30 minutes, or until softened. Drain well and cut into 1-inch pieces.

While the yuba is soaking, prepare the minced pork. In a medium bowl, combine the ground pork with 1 tablespoon soy sauce, 1 teaspoon cornstarch, 1/2 teaspoon sesame oil, and 1/4 teaspoon white pepper. Mix well and set aside to marinate.

In a small bowl, whisk together 1 tablespoon cornstarch and 2 tablespoons water to create a slurry. Set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated minced pork and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside, leaving any rendered fat in the pan.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.

Add the diced carrot and celery to the skillet and stir-fry for 3-4 minutes until slightly softened.

Return the cooked minced pork to the skillet. Add the softened yuba pieces, chicken broth, oyster sauce, light soy sauce, and sugar. Bring the mixture to a simmer.

Stir the cornstarch slurry (from Step 3) once more, then slowly pour it into the simmering mixture, stirring constantly until the sauce thickens to your desired consistency.

Cook for another 1-2 minutes, ensuring all ingredients are well combined and heated through. Taste and adjust seasoning if needed.

Serve hot, garnished with chopped green onions, and ideally with steamed rice.
