In a large mixing bowl, combine the ground beef with the finely diced onion, minced garlic, salt, black pepper, and Worcestershire sauce. Mix all ingredients thoroughly until just combined, being careful not to overmix.

Divide the seasoned ground beef mixture into 4 equal portions. Form each portion into a patty, ensuring they are slightly larger than the cheddar cheese slices. Heat a pan over medium-high heat. Cook the patties for approximately 3-4 minutes per side, just until they are browned on the outside. It is important not to cook them all the way through, as they will continue to cook in the oven. Remove the patties from the pan and let them cool slightly on a plate.

Lightly flour a clean work surface. Unroll the thawed sheet of puff pastry. Using a rolling pin, gently roll out the pastry slightly to achieve dimensions of approximately 30 cm x 30 cm (about 12 x 12 inches). Cut the large pastry sheet into 4 equal squares.

Take one square of puff pastry and place one slice of cheddar cheese in the center. Carefully place one partially cooked burger patty on top of the cheese. Add another slice of cheddar cheese on top of the burger patty.

Bring the four corners of the puff pastry square up over the burger patty and cheese. Pinch the seams and edges firmly together to completely seal the patty inside the pastry, forming a neat parcel. Ensure there are no open gaps where the cheese could leak out during baking. Repeat this process for the remaining 3 patties.

Line a baking sheet with parchment paper. Carefully transfer the assembled cheeseburger Wellingtons to the prepared baking sheet. In a small bowl, whisk the large egg to create an egg wash. Brush the tops and sides of each Wellington generously with the egg wash. Sprinkle approximately 1 teaspoon of sesame seeds evenly over the top of each pastry parcel.

Preheat your oven to 200°C (400°F). Bake the Cheeseburger Wellingtons for 20-25 minutes, or until the puff pastry is beautifully golden brown, puffed, and appears shattery and crispy.

Once baked, remove the Wellingtons from the oven and let them rest on the baking sheet for a few minutes before serving. Serve hot, optionally accompanied by sliced dill pickles and your favorite burger sauce.
