Preheat your oven to 190°C (375°F).

Season the entire pork loin generously with garlic powder, onion powder, salt, and black pepper.

Brush the top and sides of the seasoned pork loin evenly with Dijon mustard.

Wrap the bacon slices securely around the pork loin, overlapping them slightly to fully cover the meat.

Pat the brown sugar heavily over the entire bacon layer, ensuring it sticks well to the surface.

Place the prepared pork loin into a baking dish.

Roast in the preheated oven for 45–50 minutes, or until the internal temperature of the pork loin reaches 63°C (145°F) and the bacon layer is caramelized and beautifully crisp.

Remove the roast from the oven and let it rest for 10 minutes before slicing. Use tongs to help hold the loin while slicing to trap all the rich, sweet glazes and juices inside.
