Take 1 block of extra firm tofu and press it to remove excess water. Once pressed, cut the tofu into bite-sized cubes.

In a bowl, add 1/4 cup of cornstarch. Add the cubed tofu to the bowl and toss thoroughly until all pieces are evenly coated with cornstarch.

Arrange the coated tofu cubes in a single layer in your air fryer basket. Spray the tofu generously with olive oil. Air fry the tofu at 400°F (200°C) for 15-20 minutes, making sure to flip the tofu halfway through the cooking time to ensure even crispiness. The tofu should be golden brown and crispy when done.

While the tofu is air frying, combine all the orange sauce ingredients in a saucepan: 1/2 cup orange juice, 1/4 cup soy sauce, 2 tablespoons maple syrup, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 minced clove of garlic, and 1/2 teaspoon grated ginger. Whisk these ingredients together until well combined.

In a separate small bowl, create a cornstarch slurry by mixing 1 tablespoon of cornstarch with 2 tablespoons of water. Whisk until smooth.

Bring the sauce mixture in the saucepan to a simmer over medium heat. Once simmering, slowly pour in the cornstarch slurry while continuously whisking. Continue to whisk until the sauce has thickened to your desired consistency.

Add the crispy air-fried tofu directly into the thickened orange sauce in the saucepan. Toss the tofu gently until each piece is fully coated with the sauce.

Serve the Orange Tofu immediately over steamed rice. Garnish with a sprinkle of sesame seeds and chopped scallions for added flavor and presentation.
