Preheat your oven to 400°F. Line a large baking sheet with parchment paper. Unroll the pizza dough onto a clean surface and cut it into approximately 1-inch pieces. You should get about 40-50 pieces.
In a large pot, bring 8 cups of water to a rolling boil. Carefully whisk in the 1/2 cup of baking soda until dissolved.
Working in batches (about 10-15 pieces at a time), drop the dough pieces into the boiling baking soda solution. Boil for 20-30 seconds, turning once, until they puff slightly. Do not overcrowd the pot.
Using a slotted spoon, transfer the boiled pretzel bites to the prepared baking sheet, leaving a little space between them.
In a small bowl, whisk together the large egg and 1 tablespoon of water to create an egg wash. Lightly brush the tops of each pretzel bite with the egg wash, then sprinkle generously with coarse sea salt.
Sprinkle the shredded cheddar cheese evenly over the pretzel bites on the baking sheet.
Bake for 12-15 minutes, or until the pretzel bites are golden brown and the cheese is melted and bubbly. Remove from the oven.
