To make the hibiscus thyme syrup, combine the dried hibiscus flowers, fresh thyme sprigs, granulated sugar, and water in a small saucepan.

Bring the mixture to a simmer over medium heat, stirring until the sugar is fully dissolved. Once simmering, reduce heat to low and let it steep for 5 minutes.

Remove the saucepan from the heat and let the syrup cool completely. Once cool, strain the syrup through a fine-mesh sieve into a clean jar or bottle, discarding the hibiscus and thyme. Refrigerate the syrup for at least 1 hour to chill thoroughly.

To assemble the mocktails, fill four glasses with ice.

Pour 2 tablespoons of the chilled hibiscus thyme syrup into each glass, followed by 1 tablespoon of fresh lime juice.

Top each glass with 1/2 cup of chilled sparkling water. Gently stir to combine.

Garnish each mocktail with a lime slice and a fresh thyme sprig before serving.
