Dice the white onion and Chinese chives. Slice the shitake mushrooms. Mince the garlic cloves into a paste and set aside.

For the soy cured yolk, add 20 ml of soy sauce to a small pot. Carefully submerge a raw egg yolk in the soy sauce. Leave to cure for up to 1 hour.

Add a tablespoon of oil to your wok and heat until hot, ensuring the surface is coated.

Add the diced onions, Chinese chives, and sliced mushrooms to the hot wok. Cook until they achieve a nice color.

Add the dried baby shrimp to the wok. Continue to cook until they are cooked through and have released their natural oils.

Add the minced garlic paste to the wok and stir briefly.

Add the cooked rice to the wok and cook out, stirring constantly to break up any clumps.

Add the 2 parts light soy, a pinch of white pepper, and salt to taste. Stir the rice around the wok, cooking it thoroughly to ensure even distribution.

Add the 1 part dark soy and 1 tablespoon of LKK Chiu Chow Chilli Oil to the fried rice. Stir to combine well. Set the fried rice aside, ready to serve.

For the steak, pat it dry with paper towels and generously season each side with salt.

Heat a very hot pan (preferably cast iron) and add the seasoned steak. Sear off to develop a crust on one side.

Turn the steak and sear the other side to develop a similar crust.

Add a cube of butter and a stick of lemongrass to the pan. Baste the steak with the melted butter and lemongrass until cooked to your desired doneness.

Remove the steak from the pan and rest it generously on a cutting board for at least 5-10 minutes.

When ready to plate, add the fried rice to a serving bowl.

Slice the rested steak against the grain and arrange it artfully on top of the fried rice.

Carefully place the soy cured egg yolk on top of the steak and rice.

Garnish with spring onion curls, chilli flakes, sesame seeds, and another drizzle of LKK Chiu Chow Chilli Oil. Add fresh chilli if desired.
