In a small bowl, combine the chili powder, chicken or beef bouillon powder, soy sauce powder, onion powder, garlic powder, ginger powder, black pepper, and mushroom powder. Stir all the powdered ingredients together thoroughly until well combined. This is your homemade spicy ramen seasoning. You can store any unused seasoning in an airtight jar for future use.

Bring 6 cups of water to a rolling boil in a large pot over high heat.

Add the instant ramen noodles (without their original seasoning packets) to the boiling water. Stir in 1 tablespoon of the homemade spicy ramen seasoning per serving (or to taste) into the pot with the noodles.

Crack one egg directly into the cooking ramen for each serving and allow them to poach gently within the broth. Cook for 2-3 minutes, or until the eggs are cooked to your desired consistency (runny yolk or firm).

While the ramen is cooking, slice the canned Spam into desired pieces.

Once the noodles and eggs are cooked to your preference, carefully pour the entire contents of the pot into individual serving bowls.

Add the sliced Spam and dried seaweed strips to each bowl. Garnish with a sprinkle of sesame seeds.

Serve immediately and enjoy your spicy homemade instant ramen!
