Preheat the oven to 400°F. Line a baking sheet with parchment paper for easier cleanup, if desired.

Slice the French baguette into approximately 1/2-inch thick pieces, cutting on an angle to create more surface area. You should get about 12-16 slices depending on the baguette size.

Arrange the baguette slices in a single layer on the prepared baking sheet. Brush both sides of each baguette slice generously with olive oil.

Toast the baguette slices in the preheated oven for 5-6 minutes, or until they are lightly browned and crisp.

While the baguette is toasting, wash and thinly slice the Honeycrisp apple. A mandoline can be used for very thin, even slices, or use a sharp knife.

Once the toasted baguette slices are removed from the oven, immediately place one slice of brie cheese on top of each warm crostini.

Return the baking sheet to the oven and bake for about 7 minutes, or until the brie cheese is melted and bubbly.

Remove from the oven and immediately top each warm crostini with a thin slice of Honeycrisp apple. Garnish each crostini with a few small sprigs of fresh thyme.

Finish by drizzling a small amount of honey over each crostini before serving. Serve warm.
