Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 2 1/4 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed. Remove from heat and let stand, covered, for 10 minutes.

While the rice is cooking, prepare the sushi vinegar. In a small bowl, whisk together the rice vinegar, granulated sugar, and salt until the sugar and salt are dissolved.

Press the seasoned sushi rice evenly into the bottom of the prepared baking dish. Sprinkle a generous layer of furikake over the rice.

Spread the kani salad topping evenly over the furikake layer. Ensure it covers the entire surface.

Bake for 15-20 minutes, or until the topping is bubbly and lightly golden brown. If desired, you can broil for the last 1-2 minutes for extra browning, watching carefully to prevent burning.

Remove from the oven and let cool for 5-10 minutes before serving. Garnish with sliced green onions, sliced avocado, and toasted sesame seeds.

Serve warm with roasted seaweed snacks, using the seaweed to scoop up portions of the sushi bake.
