Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan with non-stick cooking spray and line the bottom with parchment paper.

In a large bowl, whisk together the 1 1/4 cups (250 g) granulated sugar, 1 cup (200 g) extra virgin olive oil, and 1/2 teaspoon vanilla extract for 30 seconds.

Whisk in the 2 large eggs, one at a time, ensuring each is fully incorporated before adding the next. Then, whisk in the 1 egg yolk. Follow by whisking in the 1 cup buttermilk, and then the 1/4 cup plus 2 tablespoons freshly squeezed lemon juice.

Sprinkle the 1/2 teaspoon baking powder into the bowl and vigorously whisk until combined. Repeat this step for the 1/2 teaspoon baking soda, and then for the 1 teaspoon kosher salt, whisking vigorously after each addition.

Whisk in the 1 1/2 cups (195 g) all-purpose flour until the batter is smooth and no lumps remain.

Scrape the prepared batter into the greased and parchment-lined 9-inch cake pan. Generously sprinkle additional granulated sugar over the top of the batter.

Bake the cake for about 30 to 35 minutes, or until a wooden skewer inserted into the center comes out with a moist crumb or two.

Let the cake cool in the pan for about 20 minutes. After cooling slightly, run a knife around the edges of the cake to loosen it, then invert the cake onto a serving platter. Allow the cake to cool completely to room temperature before slicing and serving.
