In a medium bowl, combine the ground pork, finely chopped spring onion, minced garlic, minced ginger, 2 tablespoons of soy sauce, mirin, and white pepper. Use your hands to thoroughly mix all the ingredients until well combined.

Add 1 tablespoon of chili oil to the bottom of a lidded pot (approximately 8-inch diameter). Use your hand or a brush to spread the oil around and coat the entire bottom surface of the pot.

Place a thin layer of the prepared pork filling directly onto the chili oil at the bottom of the pot. This helps prevent sticking. Then, arrange a layer of wonton wrappers over the pork filling, slightly overlapping if necessary to cover the surface.

Spread an even layer of the pork filling over the wonton wrappers. Add another layer of wonton wrappers on top of the meat. Continue layering the pork mixture and wonton wrappers, alternating them, until you have used most of the filling and wrappers, ending with a layer of wonton wrappers on top.

In a small bowl, whisk together 1/4 cup of soy sauce and 1/2 cup of water. Pour this mixture over the layered dumpling lasagna. Start by pouring it around the edges of the pot, then pour the rest over the top, ensuring all layers are moistened.

Drizzle an additional 2 tablespoons of chili oil over the top layer of the dish.

Place the lid securely on the pot. Cook the dumpling lasagna on the stovetop over a medium-low heat, maintaining a gentle simmer, for approximately 20-25 minutes, or until the pork is cooked through and the wonton wrappers are tender.

Once cooked and bubbling, remove the pot from the heat. Carefully remove the lid. Top the dish with additional chili oil, as desired, and the finely sliced spring onion. Serve directly from the pot.
