Prepare the shrimp by ensuring they are peeled, deveined, and butterflied. To butterfly, make a cut along the back of each shrimp, but not all the way through, allowing it to open up flat.

In a large mixing bowl, combine the dry batter ingredients: 2/3 cup cornstarch, 2 tablespoons all-purpose flour, and 1/2 teaspoon baking powder. Whisk them thoroughly until well combined.

Add the wet batter ingredients to the dry mixture: 6 tablespoons water, 1/2 cup vegetable oil, and 3 egg whites. Whisk all the batter ingredients together until the mixture is well combined and smooth, with no lumps.

Heat 4 cups of vegetable oil in a deep pan or Dutch oven over medium-high heat until it reaches 350°F (175°C). Use a cooking thermometer to ensure accurate temperature.

While the oil is heating, prepare the sauce. In a separate bowl, combine 1/2 cup mayonnaise, 2 tablespoons Sriracha, 1 tablespoon honey, and 1 tablespoon fresh lime juice. Mix until thoroughly combined and smooth.

Dip each butterflied shrimp into the prepared batter, ensuring it is fully coated. Allow any excess batter to drip off.

Carefully place the battered shrimp into the hot oil, one by one, being careful not to overcrowd the pan. Fry in batches if necessary. Fry the shrimp for 2-3 minutes per side, or until they are golden brown and crispy.

Remove the fried shrimp from the oil using a slotted spoon or tongs and place them on a wire rack set over a baking sheet, or on a paper towel-lined plate, to drain excess oil.

Once all the shrimp are fried, place the crispy shrimp into a large mixing bowl. Pour the prepared sweet and spicy sauce over the shrimp.

Gently toss the shrimp until each piece is evenly coated with the sauce. Serve immediately, garnished with chopped green onions and lime wedges.
