Bring a large pot of salted water to a boil. Add 8 ounces of pasta and cook according to package directions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the 1 pound of peeled and deveined shrimp. Season the shrimp with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for 2-3 minutes per side, or until the shrimp are pink and cooked through. Remove the cooked shrimp from the skillet and set aside.

In the same skillet, reduce the heat to medium. Add 2 tablespoons of unsalted butter and melt it. Add 1 tablespoon of minced garlic and 1/2 teaspoon of red pepper flakes. Sauté for about 30 seconds until the garlic is fragrant.

Pour in 1/2 cup of chicken broth and add 1 teaspoon of Italian seasoning. Bring the mixture to a simmer.

Stir in 1/2 cup of heavy cream, 1/4 cup of finely chopped sun-dried tomatoes, and 1/4 cup of grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth and creamy.

Add the cooked pasta to the sauce in the skillet and toss to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency. Return the cooked shrimp to the skillet and gently toss everything together.

Garnish with fresh parsley and serve immediately.
