Add the diced chicken breast to a bowl. Sprinkle with 2-3 tablespoons of cornflour, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and season with salt and pepper to taste. Mix well to ensure all the chicken pieces are evenly coated.

Cook the coated chicken using one of the following methods: Air-fryer: Preheat your air-fryer to 200°C (390°F). Cook the chicken for 20 minutes, shaking the basket halfway through, until golden and cooked through. Fry pan: Heat 1/2 tablespoon of olive oil in a large fry pan over medium-high heat. Add the chicken and cook, stirring occasionally, until golden brown and cooked through, about 8-10 minutes.

While the chicken is cooking, prepare the sauce. In a separate pan, combine 4 tablespoons of honey, 2 tablespoons of soy sauce, 1 minced clove of garlic, 1-2 teaspoons of sesame oil, 1 teaspoon of rice wine (or white vinegar), and 2/3 cup of chicken stock. Bring the mixture to a boil over medium heat.

In a small bowl, mix 1 tablespoon of cornflour with 1 tablespoon of water until it forms a smooth slurry with no lumps. Once the sauce in the pan is boiling, add the cornflour slurry, mixing well. Continue to simmer, stirring constantly, until the sauce thickens to your desired consistency.

Add the cooked chicken and 1-2 tablespoons of sesame seeds to the pan with the thickened sauce. Toss everything together until the chicken is thoroughly coated in the sticky honey sesame sauce.

Serve the Chinese Honey Sesame Chicken immediately with steamed rice and green vegetables. Garnish with fresh spring onion and additional sesame seeds, if desired.
