In a large mixing bowl, add the cold chopped unsalted butter and whisk until it becomes slightly creamy.

Add the caster sugar and light brown sugar to the bowl. Whisk together until the mixture is well combined and fluffy.

Add the whole egg, egg yolk, and vanilla extract to the bowl.

Add the chocolate chunks or chips. Whisk until all ingredients are fully incorporated.

Add the plain flour, salt, baking powder, and baking soda to the mixture. Gently mix until just combined, being careful not to overmix.

Preheat the oven to 175-180°C (350°F).

Take any shape mini baking dish (circle, square, rectangle, or other). Place a layer of the prepared cookie dough into the dish.

Add a dollop of Nutella on top of the first cookie dough layer.

Place another layer of cookie dough on top of the Nutella, gently pressing it down to cover.

Bake for 15-20 minutes (timing depends on the type of dish) or until the tops are lightly golden while the centers remain soft and gooey.

Remove the mini cookie pies from the oven and let them cool slightly.

Serve warm with ice cream and chocolate sauce. Enjoy!
