In a medium mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk until well combined and smooth. Taste and adjust sweetness if desired.

Prepare all your fruits: hull and slice the strawberries, rinse the blueberries, peel and dice the mango, and peel and dice the kiwi. Keep them in separate bowls for easy layering.

To assemble the parfaits, grab four individual parfait glasses, mason jars, or clear dessert bowls. Start by spooning a layer of the prepared yogurt mixture into the bottom of each glass.

Next, add a layer of mixed fruits over the yogurt. You can alternate between different fruits or mix them as you go. Follow with a spoonful of popping boba.

Repeat the layers: another spoon of yogurt, followed by more fruit and popping boba, until the glasses are full. Aim for 2-3 layers of each component.
