Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the bell peppers, onion, and potatoes. Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, kosher salt, and black pepper. Toss well to ensure all vegetables are evenly coated.

Spread the seasoned vegetables in a single layer on the prepared baking sheet. Add the crumbled Trader Joe's Hot Italian Sausage made with Pork evenly over the vegetables.

Bake for 20 minutes, stirring halfway through, until the vegetables are tender-crisp and the sausage is cooked through and browned.

Remove the baking sheet from the oven. Sprinkle the shredded or diced Trader Joe's Unexpected Cheddar evenly over the sausage and vegetables. Return to the oven and bake for another 3-5 minutes, or until the cheese is melted and bubbly.
