Preheat your oven to 400°F (200°C).

Grab a 9x13 inch baking dish.

Add the 2 lbs chicken breast, cut into 1 inch pieces, to the baking dish.

Season the chicken with 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder. Drizzle with 2 tablespoons olive oil. Mix all the ingredients together thoroughly until the chicken is well coated.

Add 2 cups of uncooked orzo to the dish.

Pour in 2 cups of chicken broth and 1 cup of milk. Squeeze in the juice from 1 lemon.

Add 5 oz of fresh spinach and 1/2 cup of grated Parmesan cheese to the dish.

Mix all the ingredients together until they are well combined.

Cover the baking dish with foil. Place it in the preheated oven and bake for 30 minutes.

Carefully remove the foil from the dish. Return it to the oven and bake for an additional 10-15 minutes, or until the orzo is tender and the chicken is cooked through.

Garnish the baked dish with fresh parsley and extra Parmesan cheese, if desired. Serve warm.
